Updated Surplus Numbers: Actual surplus 2018 per audit was $85,163.
Boards 2011-2018 implemented policies and procedures with specific goals:
stabilize owner fees, achieve maintenance objectives and achieve annual budget surpluses.
Any surplus was retained by the association.
The board elected in fall 2018 decided to increase owner fees, even in view of a large potential surplus

BLUE indicates actual fees. These moderated when better policies and financial controls were put in place by boards

Condo Cooking - 30 Minute Shrimp Marinara Dinner

G and I have come up with a repertoire of quick, 30 minute meals.

This one is easy shrimp marinara over pasta. Dessert was a tart made a couple of days ago, and while we cooked we ate a fresh salad.

We make our own marinara sauce and freeze it, but there are many good marinara sauces available at the grocer. We avoid those with corn syrup and other sweeteners, which we find to be excessive. Sugar, by the way, is an old "cheat" for thickening tomato sauce.

So here we are. A simple recipe consisting of:

  1. Frozen, cooked shrimp. Saute in olive oil with thin sliced fresh garlic. 
  2. Marinara sauce. Heat and add a bit of your favorite red wine. Then add to the shrimp. Continue cooking. 
  3. Frozen green beans. Saute in olive oil and butter, season with salt and fresh pepper.
  4. Thin pasta. Heat water to boiling, add salt and a touch of olive oil. Add the pasta and cook to desired doneness. 




For variation, one can add a few mushrooms and saute with the green beans, a bit of sliced onion, etc.
